4Nbahu's Lemon and Ginger Slightly Sweet and Sour Pickle (Recipe) (UPDATE March, 2022)

Image
Lemon & Salt June 2020 When I first moved to India I had a lot of time on my hands. There was also a lot of distrust of processed foods, pickles and juices to be precise. While opinions have changed I still find that homemade pickles tend to taste better. One of my favorite pickles is lemon pickle, we eat it with poora, a savory crepe made from chickpea flour, as well as other dishes. A friend of mine’s family made most of their own pickles and she gave me the proportions needed to make a lemon pickle. Hers also had red chilli, but I didn’t want chili in mine as I planned to give it to my children. I did however, love pickled ginger which is made from ginger, salt, green chilli and lemon. So I decided to be a bit adventurous and create my own pickle. If I remember correctly I used about 5kgs of lemons and some amount of ginger. I followed my friends instructions to the letter and after a month I got a good pickle that my family continued to eat for a decade. The bonus of a...

Fuming Anger at COVID Deniers

Image
“ Why cancel ...? Don’t let the media control you … It’s no worse than regular flu. If it’s your time, nothing will stop it. Wash your hands and don’t touch your face. I’m not putting my life on hold. Merry Christmas.” My stepmother cancelled her annual Christmas Tree Trimming this year due to COVID and a friend of hers posted the above.  I read this and red hot anger boiled in my stomach and rose through my chest.  How are there still so many people who deny the facts?  These are the facts as of today December 3, 2020. On average 2% of the people who have COVID 19 die from it compared to .1% of those with the flu.  On average around 40,000 Americans die each year from the flu.  Since February and the first official USA COVID 19 death, we have lost almost 7 times that amount.  This information is easily found on Google from reputable sources.  Yet people still keep comparing COVID 19 to the flu.   Statistics as per December 3, 2020 However, e...

When Far From Home - Holidays - Thanksgiving

Image
Turkey Roasted Surrounded by Sage Dressing Thanksgiving has always been my favorite holiday.  I know for many it seems to be the most boring.  However, for me it was the joy of being with my extended family without all the comparing or stress of getting gifts or of the competition of finding Easter eggs and baskets.  Thanksgiving was a day when we all got together and just hung out with each other.  The men would be in the back room, sisters, cousins, and I would be all over, inside and outside of the house playing, aggravating, stealing whatever food that was near readiness.  Grabbing a slice of ham, or a piece of the turkey after Grandpa sliced it, or if we worked it perfectly a devilled egg.  The women, i.e Grandma, Aunt and Mom would keep running us out of the small kitchen that barely fit them.  Then finally, the entire spread would be laid out on the kitchen table and we would all gather around trying to get our favorite dishes on our plat...

I’m Not Here to Change Your Mind

Image
I’m not here to change your mind, I just want to express my views in a reasonable manner.   I’m sorry, but I dislike President Trump, not only as a man, but as a president of the United States of America.  I understand why many wealthy Americans and corporations love him, but I can’t get my mind around why anyone who struggles week to week would ever vote for him.  While he was campaigning the first time around, initially I thought he would be an interesting choice, but leading up to the election the lies he told, the comments he made, esp about grabbing p>$$% made me want to hurl.  I can still remember him being on Roseanne Barr’s talk show, even before his show “The Apprentice” and she asked if he’d ever been with a fat woman and he replied no.  As bad as I thought that was when he sexualized his daughter and his reaction to her once again made my skin crawl.  But many people have no issues with his incestual comments. I disagree with his views on...

Ode to Alex

Oh you damn dog. You troublesome heathen, You hyper leash biter.   We got you to keep your brother company. He was first and always best. But then with him I had the time and energy. He was sick and almost died when he was so little. But he recovered and bounced right back and learned  To sit, to shake and roll over. He would eat enough food to fill his tummy But there you were a year and half later.  You gobbled your puppy food from a bowl filled five times a day Then when Caesar, from his bowl walked away, You ran to finish what he had left. I say you ran, moved fast you did But your legs were short and stubby Never quite growing to match your body. You were so little that we didn’t want you left alone We didn’t want Caesar to mistake you for a bone. Our Guy Friday, would leash your brother  You thinking it was a tandem string  Grabbed the leash with your tiny teeth  Allowing yourself to be dragged to his quarter. A year later when we got your little...
